Beef Casserole and Dumplings Recipes

Ingredients :

15ml oil

450g minced beef

16 button onions

2 carrots, sliced

2 celery sticks, sliced

25g flour

600ml beef stock

salt and freshly ground black pepper

For Dumplings

115g shredded vegetables suet

50g plain flour

15ml chopped fresh parsley

water to mix

Method :
  1. Preheat the oven to 350F, Gas 4.
  2. Heat the oil in a flameproof casserole and fry the minced beef for 5 minutes until brown and sealed.
  3. Add the onions and fry for 5 minutes, stirring all the time.
  4. Stir in the vegetables and flour and cook for a further 1 minute.
  5. Add the stock and seasoning.
  6. Bring to the boil.
  7. Cover and cook in the oven for 1 1/4 hours.
  8. For the dumplings, mix the suet, four, fresh parsley and water to form a smooth dough.
  9. Roll into eight equal sized balls and place around the top of the casserole for another 20 minutes, uncovered.
  10. Serve with broccoli florets.

A traditional English recipe, this delicious casserole is topped with light herby dumplings for a filling and nutritious meal.
