Ingredients :

Topping :

minced beef

large onion, chopped

whole meal flour

canned tomatoes

tomato purée

button mushrooms

mixed dried herbs

salt and ground black pepper

 

slices whole meal bread spread with margarine

Method :

Heat the oven to 200oC (400oF), Gas 6. Put the minced beef into a non stick frying pan and stir over low heat until the fat begins to run. Spoon off the excess fat. Raise the heat to moderate and fry, stirring frequently, to brown the meat evenly. Remove the meat with a slotted spoon and set aside. Fry the onion in the fat remaining in the pan for 3-4 minutes. Return the meat to the pan, add the flour and stir for 1 minute. Add the tomatoes, tomato purée, mushrooms, dried herbs and bring to the boil. Season with salt and pepper, and simmer for 10 minutes. Transfer to an ovenproof dish. Cut the bread into triangles and arrange 'buttered' side up, on the meat. Bake for 15-20 minutes until the topping is golden and crisp.

Serves 4
