Beef Pie Recipes

Ingredients :

15ml oil

175g minced beef

115g large beef sausages

25g plain flour

1 x 200g can chopped tomatoes

90ml beef stock

30ml chopped fresh parsley

60ml tomato ketchup

15ml granulated sugar

300g prepared short crust pastry

beaten egg to glaze

salad cress, to garnish

Method :
  1. Preheat the oven to 375F, Gas 5.
  2. Slice the sausages and add to the pan.
  3. Cook for a further 5 minutes.
  4. Add the flour and cook for 1 minute.
  5. Stir in the chopped tomatoes, stock, fresh parsley, ketchup and sugar.
  6. Cook for 10 minutes, stirring occasionally.
  7. Roll out half of the pastry onto a lightly floured surface to line a round pie dish.
  8. Spoon in the filling and trim the edges.
  9. Brush with egg.
  10. Roll out the remaining pastry for the lid.
  11. Cut out two eye and a mouth and place on top of the pie.
  12. Knock up the edges and seal.
  13. Brush with beaten egg and cook for 30 minutes in the preheated oven.
  14. Remove the pie from the oven and arrange the cress around the top of the pie for the "hair".
  15. Serve immediately with freshly cooked vegetables.

Variation - This mixture can also be used as the filling for a more adult oriented cottage pie. Just top with mashed potato, sprinkle with grated cheese and cook as before.

This is a really fun packed meal for the kids. A happy face with cress hair will encourage any child to eat a good meal.
