Beef Ragout Recipes

Ingredients :

15ml oil

450g minced beef

1 garlic clove, crushed

1 onion, quartered

25g plain flour

150ml dry white wine

150ml beef stock

2 baby turnips, chopped

115g swede, chopped

2 carrots, cut into chunks

2 courgettes, cut into chunks

15ml chopped fresh coriander

5ml ground coriander

225g couscous

salt and freshly ground black pepper

fresh coriander, to garnish

Method :
  1. Heat the oil in a large pan.
  2. Add the minced beef and fry for 5 minutes.
  3. Add the garlic and onion.
  4. Cook for a further 3 minutes.
  5. Stir in the flour and cook for about 1 minute.
  6. Add the wine and stock, season and bring to boil, stirring all the time.
  7. Add the prepared vegetables with the fresh and ground coriander.
  8. Reduce the heat, cover and cook for 15 minutes.
  9. Meanwhile, place the couscous in a bowl, and cover with boiling water.
  10. Leave to stand for 10 minutes.
  11. Drain and place in a lined steamer or colander.
  12. Remove the lid from the pan and place the steamer on top.
  13. Steam the couscous over the pan for a further 30 minutes.
  14. Garnish with fresh coriander and serve.
