Cut meat into 5 cm cubes. Put in a saucepan with enough
water to cover the meat. Add star anise, sliced onion,
ginger and lemon rind. Bring to the boil, reduce heat and
simmer for 2 hours. Heat oil in pan and fry the
chopped garlic and peppercorns. After 1 minute, add in soy sauce,
rice wine and bean paste. Bring to the boil and remove from
heat. Cover and cook for another hour. To serve, remove the star anise
and lemon rind.
