Casserole Of Beef With Prunes Cooking Recipes

Ingredients :

lean braising beef, trimmed of excess fat, cut into 11/2 inch cubes

medium onions, chopped

cloves garlic, finely chopped

rashers back bacon, rind removed, cut into 1 inch (2.5 cm) squares


ground allspice

pre-soaked prunes

beef stock

softened butter

tomato purée

softened butter


Method :
  1. Mix the onions, garlic and bacon and dry fry in a non-stick pan over moderate heat for 3 minutes, stirring once or twice.

  2. Toss the meat cubes in the flour seasoned with salt, pepper, nutmeg and allspice.

  3. In a flameproof casserole, make layers of the onion mixture, beef cubes and prunes.

  4. Mix together the wine, stock and tomato purée and pour on to the casserole.

  5. Bring slowly to the boil and cover.

  6. Cook in the oven at 250oF (120oC) Gas 1/2 for 21/2 hours, or until the meat is tender.

  7. Mix the butter and flour to a paste and, on top of the stove, stir it a little at a time into the sauce.

  8. Stir until it thickens and becomes glossy.

Serves 4

Note :Jacket potatoes are a good accompaniment. Boil them for 5-10 minutes first, according to size, then bake them alongside the casserole.
