Method :
-
Boil
the plantains for 10 minutes.

Drain
and chop.
-
Fry
the onion and garlic in the oil over moderate heat for 3 minutes,
stirring once or twice.
-
Combine all the ingredients - for a smooth texture use a food
processor.

In
this case, only roughly chop the vegetables.
-
Press
the mixture into a greased 2 pt (1 liter) loaf tin and cover with
foil.

Place
the tin in a roasting pan with 2 inches (5 cm) of water.
-
Bake
in the oven at 350oF (180oC), Gas 4 for 13/4
hours.
-
Turn
out and garnish with the lime or lemon slices.
Serves 8
Note :Serve hot, with tomato or
barbecue sauce and rice. Or cold- good for left over - with a fruit
sauce and rice salad tossed with sliced peaches.
