Plantain and Beef Loaf Cooking Recipes

Ingredients :




1 tablespoon

900 g

2 tablespoons


1/4 teaspoon

ripe plantains, peeled

medium onion, chopped

clove garlic, chopped

vegetable oil

red pepper, seeded and chopped

tomatoes, peeled and chopped

beef skirt, minced


large egg, beaten


thin slices of lime or lemon, to garnish

salt and pepper

Method :
  1. Boil the plantains for 10 minutes.

  2. Drain and chop.

  3. Fry the onion and garlic in the oil over moderate heat for 3 minutes, stirring once or twice.

  4. Combine all the ingredients - for a smooth texture use a food processor.

  5. In this case, only roughly chop the vegetables.

  6. Press the mixture into a greased 2 pt (1 liter) loaf tin and cover with foil.

  7. Place the tin in a roasting pan with 2 inches (5 cm) of water.

  8. Bake in the oven at 350oF (180oC), Gas 4 for 13/4 hours.

  9. Turn out and garnish with the lime or lemon slices.

Serves 8

Note :Serve hot, with tomato or barbecue sauce and rice. Or cold- good for left over - with a fruit sauce and rice salad tossed with sliced peaches.
