Saltimbocca Recipes

plain flour
veal scaloppine, 100 each
lite margarine
lean ham, 50g each
grated mozzarella cheese |
Method :
- Lightly flour each veal scaloppine.
- Melt margarine in a large frying
pan over moderate heat, add veal, cook30 seconds each side, remove
from heat and place into a baking dish.
- Place a slice of ham on top of
each scaloppine, top with mozzarella cheese.
- Bake at 190°C for 10 minutes, or
until cheese has melted.
- Serve with a small salad.
