Saltimbocca Recipes

Ingredients :

4 slices

3/4 cup

plain flour

veal scaloppine, 100 each

lite margarine

lean ham, 50g each

grated mozzarella cheese

Method :
  1. Lightly flour each veal scaloppine.
  2. Melt margarine in a large frying pan over moderate heat, add veal, cook30 seconds each side, remove from heat and place into a baking dish.
  3. Place a slice of ham on top of each scaloppine, top with mozzarella cheese.
  4. Bake at 190°C for 10 minutes, or until cheese has melted.
  5. Serve with a small salad.

Serves 4
