Speedy Meat Loaf Recipes

Ingredients :

1 cup paper-thin slices onion

1 tbsp cooking oil

2 lb ground beef

1 cup commercial sour cream

2 eggs

1 envelope onion soup mix

dash nutmeg

1 cup soft bread crumbs

cooked mixed vegetables

Method :

Heat oven to 500F (260C). Grease a 9-inch (23-cm) ring mould very well. Separate the onion slices into rings and spread them evenly in the bottom of the ring mould. Cover the mould with aluminum foil and put in oven for 10 minutes. Heat oil in large heavy skillet while onions are cooking. Add ground beef and cook, stirring often, until meat has lost all its pink color and is lightly browned. Remove from heat.

Beat sour cream and eggs together lightly with a fork to blend. Stir in onion soup mix, nutmeg and bread crumbs. Add browned beef and blend well. Remove ring mould from oven and discard aluminum foil. Pack meat mixture into mould on top of onions. Return pan to oven and bake 15 minutes. Turn on broiler and continue cooking 5 minutes more or until well browned on top. Drain off any juices in pan and unmould meat loaf on serving platter. Fill centre with hot mixed vegetables. Serve immediately.
