flour, 1/2 tsp salt and 1/4 tsp pepper in a flat dish. Roll cubes of
beef in this mixture to coat all side. Heat oil in large heavy saucepan
or Dutch oven. Add meat cubes and brown well on all sides. Add onions,
tomato juice, water, 1 tsp salt and Tabasco. Cover tightly and simmer 60
minutes. Cut carrots diagonally into pieces about 1 inch long. Add to
meat and simmer about 45 minutes. Add coffee, lima beans and sugar and
simmer for 30 minutes or until everything is tender.
dumplings on top of meat and vegetables and cook as directed in recipe.
Put dumplings around outside of a large serving dish and spoon meat and
vegetables into centre of dish. Thicken gravy slightly by shaking 2 tbsp
(30ml) flour with 1/4 cup (60ml) cold water in a small jar and gradually
stirring into boiling gravy. Pour gravy over meat and vegetables.
