Mackerel with Olives and Tomatoes Recipe
Ingredients:
4 x 375g/ 12 oz mackerel, cleaned and gutted
2 tbsp plain flour
4 tbsp olive oil
1 garlic clove, crushed
3 anchovy fillets
250g/ 8 oz canned plum tomatoes, drained and chopped
24 pitted black olives, halved
150ml/ 1/4 pint Fish stock
1 tbsp chopped parsley
salt and pepper
Method:
1. Lightly flour the mackerel. Heat the oil in a large pan. Add the garlic and anchovies and cook over a medium heat until the garlic is lightly browned. Add the fish add cook for a few minutes, turning once.
2. Add the tomatoes and olives. Continue to cook, adding fish stock from time to time, for about 30 minutes, until the fish is cooked and the sauce well thickened. Season to taste with salt and pepper and sprinkle with parsley just before the end of the cooking time.
3. Serve the fish with the sauce poured over it. This dish is delicious served with a country bread.
