Shrimps (Prawns) have a grey, hinged shell which turns pink when cooked. Small shrimps are usually sold already cooked. Only the body and tail are edible.

- To prepare, pull off the head and legs and carefully peel away the shell on the body and tail.

- If uncooked, simmer the shrimps in lightly salted water for 3-5 minutes until pink, then serve in a salad. Alternatively, use raw prawns in sauces or stir-fries, adding them raw to the pan. They will be cooked through in 3-5 minutes.
