Ingredients:

1/3 cup olive oil
1/4 cup wine vinegar
1 tsp sugar
1/2 tsp salt
1/4 tsp dried leaf thyme
1/4 tsp dried leaf basil
1/4 tsp chili powder
8-10 cups torn-up mixed salad greens
2 large oranges
1 large ripe avocado
4 green onions, sliced paper thin

Method:

Combine oil, vinegar, sugar, salt, thyme, basil and chili powder in a small jar with a tight lid. Shake to blend well and set aside until needed. Tear up salad greens shortly before serving time and put them in a large shallow bowl. Peel oranges, cut them into slices then cut each slice in half. Peel avocado and cut into slices lengthwise. Toss about half of the oil and vinegar dressing with the salad greens. Top the greens with a ring of overlapping slices of orange and avocado. Sprinkle with onions. Bring to table along with remaining dressing in a small container. Drizzle remaining dressing over the salad and toss lightly. Serve immediately.
