Mothers Day’s Favorite Cookies Recipe

Ingredients :
1 cup soft butter
3 cups brown sugar, packed
2 eggs
1 tsp vanilla
2 cups sifted all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup flaked coconut
2 cups quick-cooking rolled oats
Method :
Heat oven to 375F (190C). Grease cookie sheets. Beat butter, brown sugar, eggs and vanilla together until fluffy. Sift flour, baking powder, baking soda and salt together into mixture and blend well. Stir in coconut and rolled oats. Drop by rounded tablespoonfuls 3 inches (7.5cm) apart on prepared cookie sheets and flatten with a fork. Bake 10 minutes or until nicely browned and set. Cool until firm then life off sheets and finish cooling on racks.
Makes about 3 dozen large cookies
