How to choose watermelons ?

The easiest and surest way to pick a watermelon is to have it cut so you can see what it looks like on the inside. Look for firm, juicy flesh with good red color and thin rind (white part). The red flesh shouldn’t have any white streaks. Seeds should be dark brown or black. White seeds are a sign of immaturity.
If you can’t have the watermelon cut first, here are a few tips. Look for a rather smooth surface. It should be slightly dull (neither very shiny nor very dull). The ends of the melon should be filled out and rounded. The underside should have a creamy color. While these are qualities that the “experts” look for, they don’t always guarantee a melon at its peak of ripeness and flavor. It is therefore a good idea to do as the experts do when they choose an uncut melon – cross your fingers!
