Be sure to grease the cookie sheet first. Place a small dab of shortening (a soft, white, solid fat) on waxed paper and spread it lightly over the cookie sheet to produce a thin film of grease. Or you can use cooking oil or one of the new oil sprays.

Another thing to remember: don’t crowd the oven. Too many sheets in the oven at one time will cut down the circulation of hot air. Some parts of the oven will become too hot, while others remain too cool. So pans and cookie sheets should always be placed with space between them.
