The most common kind is called a “stand-up” grater. The stand-up grater is inexpensive and easy to use. For grating mozzarella cheese, use the side with the large round holes. Simply rub the cheese firmly down over the cutting edges - but watch your fingers! The very fine side is good for grating things like Parmesan cheese into very fine pieces. The side with medium-size holes cuts things into small shavings (such as grated orange or lemon rind). The side with the large slits is good for shredding things - such as cabbage for coleslaw or lettuce for tacos.
