Custard Sauce Recipes

Ingredients :

4 egg yolks or two eggs and two egg yolks

600ml milk

2 tbsp caster sugar

1/4 tsp vanilla essence

Method :

Beat the eggs in a bowl with the sugar and 3 tbsp of milk. Heat the rest of the milk in a saucepan. Do not let it boil. Then slowly add it to the egg mixture, stirring all the time. Pour this mixture through a sieve into the top of a double saucepan or put the bowl over a saucepan of hot water. Cook the sauce very slowly, stirring all the time. Do not let the sauce boil or burn. when the custard sauce is thick, add the vanilla essence and stir well. Serve hot or cold. If you are going to serve it cold, put a little sugar on the top of the custard. This will stop a skin forming on the custard.

Serves 6

Custard sauce is served with many puddings. You can now buy custard powder for making custard sauce but the result will not be as good as this. Real custard sauce is not difficult to make, but be careful - do not let it boil.
