Northumbrian Potted Kipper Recipes

Ingredients :

3 kippers

2 tbsp cream

125g soft butter

1 tbsp lemon juice

a very little cayenne pepper or chili powder

1/4 tsp ground nutmeg

Method :

Northumbria is in the northeast of England, near Scotland. It is famous for its fish, especially smoked fish. Kippers are smoked herring.

Boil some water in a saucepan. Put the kippers into the boiling water and cook them slowly for 5 minutes. Drain the kippers. Remove the skin and bones from the kippers. Leave them until they are nearly cold. Then mash them with a fork in a bowl. Make the mixture as smooth as possible. Then add the cream and butter and beat the mixture with a wooden spoon. Lastly add the lemon juice, cayenne pepper or chili powder and nutmeg. Mix well. If you have an electric blender, put all the ingredients in the blender for 1 minute. You may need a little more cream or lemon juice if you use a blender. When the mixture is smooth, put it into a jar and cover with a lid or with aluminum foil. Keep it in the refrigerator until you need it.
