Method :
Whisk the egg
whites in a bowl until they are almost stiff. Put the icing sugar
through a sieve. Then add the icing sugar to the egg whites a little at
a time. Beat the mixture well with a wooden spoon. When half the sugar
is in the bowl with the egg whites, add the lemon juice. Beat the
mixture again. Continue to add the icing sugar, a little at a time. Beat
well until the mixture is really stiff. Stir in the glycerine. This
helps to keep the icing soft. Cover the almond paste with the icing. Use
a palette knife. The easiest way is to use the palette knife to make the
icing look like snow. Leave the cake for 1-2 days before you cut it.
