Method :
Melt the
butter in a saucepan. Add the flour. Cook very gently for 2 minutes,
stirring all the time. Take the saucepan off the heat. Slowly stir in
the milk. Beat well. There must not be any lumps. When the mixture is
smooth, put the saucepan back on the heat. Bring it to the boil, still
stirring all the time. Boil it gently for 3 minutes, still stirring. Add
salt and pepper.
Serves 4-6
White sauce
must always be very smooth. There must not be any lumps of flour in it.
The important thing is to beat the sauce thoroughly with a wooden spoon
after you have added the milk. Do not let it boil until it is really
smooth. Add about 50g cheese to make a cheese sauce, or 3 tbsp of
chopped parsley to make a parsley sauce.
