Mini Martabak - Brunei Recipes

Ingredients :

Dough Ingredients:

300g all purpose flour (sifted)

1 tsp salt

1 tbsp castor sugar

25g margarine

1 small egg

50ml fresh milk

25ml sweetened condensed milk

50-70ml water

 

Filling Ingredients:

100g minced beef

1 tbsp curry powder

2 tbsp coconut milk

1/2 cube of beef stock

30ml cooking oil

3 shallots, 2 cloves garlic, 3cm ginger (minced)

 

Onion Pickle Ingredients:

1 large onion (thinly sliced), 1 tsp red coloring, 2 tbsp sugar, 1/4 tsp salt (mixed evenly and refrigerated)

Method :

Combine all ingredients for the dough and knead. Divide dough into small balls and rub with margarine (extra). Keep prepared dough covered in an air-tight container overnight.

To prepare filling: Saute minced ingredients and add curry powder, stock and coconut milk.

Add minced beef and stir until beef is half-cooked. Remove from heat and let it cool. Knead and roll the dough until very thin. Spread filling onto the flattened dough and fold, enclosing the filling. Set aside. Repeat for the remaining dough. Oil a skillet and fry mini martabak until golden brown on both sides. Serve mini martabak with the onion pickle.
