Prawns in Sambal Terasi - Brunei Recipes

Ingredients :

5 large prawns (shelled except for tails)

2 tbsp cornflour

10 red chilies (sliced and seeded)

2 tbsp belacan powder

1 large tomato (chopped)

3 shallots, 2 cloves garlic (thinly sliced)

20ml margarine (melted) - for frying prawns

20ml margarine (melted) - for sauteing

10ml lime juice

salt and sugar to taste

Method :

Coat prawns with flour and fry in melted margarine for 2 minutes. Heat melted margarine and saute chilies, shallots and garlic. Add belacan powder and tomato. Cool and grind ingredients. Add lime juice, salt and sugar to taste. Rub prawns with sambal mixture and grill prawns for 2 minutes. Serve prawns with remaining sambal.

Serves 4
