Cracked Wheat Burgers With Yoghurt Sauce Recipes

Ingredients :

50 g cracked wheat

450 g raw minced beef

1 egg

1 tbsp chopped fresh parsley

1/2 tsp mustard powder

1/4 tsp pepper

1/4 tsp salt

4 wholemeal baps or pitta breads

4 lettuce leaves

2 tbsp natural yoghurt

1 tbsp mayonnaise

pinch of ground coriander

1 small tomato

3 spring onions or 1 small onion

Method :

Put the cracked wheat into a bowl. Cover with boiling water and leave to stand for 10 minutes. Drain well, squeezing out excess moisture. Mix the wheat with the beef, egg, parsley, mustard, salt and pepper. Shape into 4 round cakes. Grill under medium heat for 10 minutes. Split the baps or pitta breads and put a lettuce leaf on the base of each. Put a burger on each lettuce leaf. Stir together the yoghurt, mayonnaise and coriander. Skin and deseed the tomato and chop the flesh finely. Chop the onions finely. Mix into the yoghurt. Spoon the sauce over the burgers and top with bread halves.

Note :

A variation on the solid meat burger with a tangy sauce. The burgers are best grilled, but they take on a very special flavor if cooked over a barbecue fire.
