Method :
- Place the minced beef in a bowl
together with the onion and celery.
- Season well.
- Stir in the herbs and mustard,
bringing them together to form a firm mixture.
- Divide the mixture into eight
equal portions.
- Place four on a chopping board and
flatten each one slightly.
- Place the crumbled cheese in the
center of each.
- Flatten the remaining mixture and
place on top.
- Mould the mixture together
encasing the crumbled cheese and shape into four burgers.
- Grill under a medium heat for 10
minutes, turning once or until cooked through.
- Split the burger buns and place a
burger inside each.
- Serve with salad and mustard
pickle.

lightly melted Stilton cheese encased in a crunchy burger is absolutely
delicious.
