Chicken and Asparagus Casserole Recipes

Ingredients :

2 tbsp butter

1/2 cup chopped onion (or more, to taste)

3/4 cup sliced celery

1 pound trimmed asparagus, cut into 1" pieces

4 cups cubed cooked chicken

1 can cream of mushroom soup

1 can cream of chicken soup

1/2 can of water chestnuts, drained and chopped

1 tbsp freshly squeezed lemon or lime juice

1/2 tsp curry powder

1 cup mayonnaise

1/2 cup shredded cheddar cheese

Method :

Preheat the oven to 350F. In a medium skillet, melt 1 tablespoon of the butter. Add the onion and celery and cook until just tender, about 5 minutes. Set aside in a medium bowl. In the same skillet, melt the remaining butter. Sauté the asparagus pieces until just tender, 5 to 7 minutes. Arrange the chicken and the asparagus in the bottom of a 9 x 13" glass baking dish. In the bowl with the onion and celery, combine the remaining ingredients except for the cheese. Pour over the chicken and asparagus. Sprinkle with cheese. Bake for 30 minutes, or until the cheese is melted and the sauce is bubbling.
