English Vegetable Casserole Recipes

onion, chopped

plain flour

canned tomatoes

Leggo's tomato puree

chopped fresh thyme

black pepper

leek, sliced, white part only

spring onions, chopped

carrots, peeled, sliced into thin strips

sliced button mushrooms

stalks celery, sliced into thin strips

Method :
  1. Heat oil in a large frying pan over moderate heat and cook the onion for 3 minutes.
  2. Sprinkle the flour over the onion and cook, stirring constantly, for 2 minutes.
  3. Add tomatoes, puree, thyme and pepper, cook for a further 5 minutes.
  4. Add the leek, spring onions, carrots, mushrooms and celery.
  5. Transfer to an ovenproof dish, cover and cook at 180C for 35 minutes.
  6. Garnish with fresh thyme sprigs if desired.

Serves 4
