Method :
- Heat oil in a large frying pan
over moderate heat and cook the onion for 3 minutes.
- Sprinkle the flour over the onion
and cook, stirring constantly, for 2 minutes.
- Add tomatoes, puree, thyme and
pepper, cook for a further 5 minutes.
- Add the leek, spring onions,
carrots, mushrooms and celery.
- Transfer to an ovenproof dish,
cover and cook at 180°C for 35 minutes.
- Garnish with fresh thyme sprigs if
desired.
