Polynesian Casserole Recipes

Ingredients :

1 1/2 pounds pork sausage

1 cup chopped onion

1 bunch of green onions with tops, sliced

1 green bell pepper, chopped

3 cups chopped celery

1 medium can mushrooms

3 flat leaf parsley sprigs

1 1/2 cups long grain brown rice

2 cans chicken with rice soup

1 package slivered almonds

Method :

Preheat the oven to 350F. In a large skillet, brown the sausages. Remove them form the skillet, reserving the fat. Add the onion, green onions, bell pepper, and celery to the skillet and cook until tender. Stir in the mushrooms and parsley and heat though. Stir in the rice, soup and almonds. Cut the sausages into 1 inch pieces and add to the vegetable mixture. Pour into a casserole dish, cover and bake 2 hours.

Makes 10 servings
