Ingredients :

dried soya beans, soaked and drained

large onion, sliced

tomatoes, skinned and sliced

chopped parsley

chopped oregano

pint brown stock

Edam cheese, grated

salt and ground black pepper

Method :

Heat the oven to 190C (375F), Gas 5. Grease an oven proof dish. Cook the soya beans in boiling, unsalted water for about 3 hours until just tender. Drain and spread half in the dish. Cover with half the onion and half the tomatoes and sprinkle with half the herbs. Season with salt and pepper.

Repeat the layers, pour on the stock and sprinkle with the cheese. Cover and bake for 30 minutes. Uncover and bake for 20 minutes, until the top is crisp and brown. Serve very hot.

Serves 4
