Baked Chicken with Lemon and Herbs Recipe

Ingredients :

1/4 cup

3 pounds

olive oil


cloves garlic (left unpeeled)

dried thyme or rosemary

chicken pieces (a whole jointed chicken or thighs, drumsticks, etc.)

Method :

Preheat the oven to 350C. Pour the olive oil into a 9 x 13" baking dish. Add the chicken pieces and turn them so they are coated with oil. Squeeze the lemon over the chicken. Scatter the unpeeled garlic cloves in the pan and sprinkle the chicken pieces with thyme or rosemary. Season well with salt and pepper. Bake for 30-35 minutes until tender and cooked through.

Serves 4

A whole jointed chicken, or pieces such as thighs or drumsticks, are slapped into a casserole dish and covered with a few seasonings in about 2 minutes. The whole thing is then baked until it's succulent and fragrant. You can even lay the chicken in the dish in the morning, add the seasonings, and leave it marinating in the fridge all day. Then pop the pan into the oven when you come home.
