Cashew Chicken Recipes

Ingredients :

4 boneless, skinless chicken breasts, cubed

1 medium onion, diced

3 chicken bouillon cubes, crushed, or 3 tsp bouillon granules

3 cups (8 ounces) sliced mushrooms (or a 10 ounce can)

1 cup uncooked regular long grain rice

2 tsp ground ginger

1 1/2 cups boiling water (use less if chicken yields water when cooking)

2 cups broccoli pieces

1 cup cashew nuts

salt and pepper to taste

soy sauce to taste

carrot shavings for garnish

Method :

Preheat the oven to 375F. In a 2 1/2 quart round casserole dish, combine the chicken, onion, and one bouillon cube. Cover and microwave on medium high (70 percent power) for five minutes, stirring once. Add the mushrooms, rice, ginger, boiling water, and remaining bouillon cubes to the same dish. Cover and bake in the oven for 30 minutes.

Stir the casserole and add the broccoli, making sure the rice is covered with liquid. Bake another 10 minutes. If the vegetable are done to your liking, remove the casserole from the oven and let stand for a few minutes, so moisture will be absorbed. Preheat the broiler.

Stir 1/2 cup of the cashews and the salt, pepper and soy sauce into the casserole. Place the remaining cashews on top and put under the broiler (without the cover) to brown the top. Garnish with carrot shavings.

Serves 4-6
