chicken portions, skinned
vegetable oil
medium sized onion, thinly sliced
clove garlic, crushed
soy sauce
ground ginger
brown sugar
fresh bean sprouts

Method :

Cut the chicken from the bones and
cut into thin strips.

Heat the oil in a pan and fry the
onion and garlic over moderate heat for 1 minute.

Add the chicken, soy sauce, ginger,
sugar and salt and stir fry for 3 minutes.

Add the bean sprouts, stir well and
fry for a further 2 minutes, stirring.

Do not allow the bean sprouts to
overcook and become soft.

Transfer to a heated serving dish
and serve at once.
Serving Suggestion :
Brown rice with peas and sweet corn and
a green vegetable such as spinach or sliced green beans.
