Method :
- Squeeze coconut to get the milk.
- Do not use water for the first
squeeze.
- Use some water for the second
squeeze.
- Pound shallots, ginger and aniseed
until fine.
- Add into the coconut milk.
- Pour this mixture into a pan and
heat over a medium fire.
- Put in salt and sugar.
- Squeeze in lime juice.
- Stir until the mixture thickens.
- Roast chicken over a low charcoal
fire and sprinkle gravy over the chicken.
- Turn the chicken over and baste
with gravy again.
- Repeat until the chicken is
cooked.
