Chicken Honey Rolls with Curry Seasoning Recipes

cracked wheat

butter

onion, chopped

sultanas

curry powder

spinach leaves, finely chopped

chicken thigh fillets

honey

curry powder, extra

soy sauce

melted butter

Method :
  1. Pour boiling water over cracked wheat and soak for 30 minutes, drain.
  2. Melt 15g butter in a saucepan, add onion, and sultanas, cook for 3 minutes.
  3. Add curry powder, cracked wheat and spinach, stir over heat until spinach is tender.
  4. Place chicken thighs skin-side-down on a flat surface, spread top with spinach mixture, roll up, secure with a skewer.
  5. Place rolls on a greased baking tray.
  6. Combine honey, curry powder, soy sauce and melted butter in a small saucepan.
  7. Stir over low heat until honey has melted, about 2 minutes.
  8. Brush each chicken roll with the glaze.
  9. Bake at 180C for 30 minutes, basting regularly with glaze.
