Method :
- Clean the chicken well.
- Boil some water in a pot and put
in the chicken.
- Lower the heat and boil for 15
minutes.
- Lift out the chicken and pour cold
water over it.
- Dip again into the boiling water
and boil for another 10 minutes.
- Drain the chicken and let it cool
for 1 or 2 hours before cutting it into small cubes.
- Remove all the bones.
- Arrange the chicken pieces on a
platter.
- Garnish with scalded Chinese
broccoli.
- To serve, pour over oyster sauce.
- To make sauce.
- Fry garlic in 1 tablespoon oil
until fragrant.
- Mix well with sesame oil, rice
wine and oyster sauce.
