Chicken In The Jungle Recipes

Ingredients :

225 g easy cook, long grain rice

575 ml boiling water

1 tsp salt

175 g onions, peeled and chopped

175 g mixture of red and green peppers, cut into small cubes

extra water

1 small can of evaporated milk

50 g brazil nuts, very thinly sliced

1.5 kg chicken legs and thighs


Method :
  1. Put rice into a pan with water and salt.
  2. Stir round and bring to boil.
  3. Lower heat and cover.
  4. Cook, undisturbed, for 1/4 hour or until rice grains are plump and tender and have absorbed all the water.
  5. Boil onions and peppers for 3 minutes in enough extra water to cover.
  6. Drain.
  7. Fork into rice with the evaporated milk and nuts.
  8. Adjust seasoning to taste.
  9. Spread over base of 10 by 8" oblong casserole dish.
  10. Top with chicken and sprinkle with paprika.
  11. Leave uncovered and bake 1 1/4 hours in moderately oven 375F, Gas 5.
  12. Serve with spinach, freshly boiled green cabbage, sprouts or a large mixed salad.
