Method :
- Clean the chicken and cut into
bite sized pieces.
- Drain and mix well with salt and
turmeric powder.
- Heat oil in a deep pan and fry the
chicken pieces until crispy.
- Grind the dried chilies until
fine.
- Pound coarsely the shallots and
ginger.
- Heat 3 tablespoons oil and fry the
ground chilies, pounded shallots and ginger, cloves and star anise.
- Add coconut milk and bring to
boil.
- Add tomato sauce, sugar, salt and
cinnamon.
- Stir constantly.
- Add in the fried chicken pieces.
- Simmer for 5 minutes.
- Add in the sliced onions and
tomatoes and green peas.
- Turn the chicken pieces to mix
well with the gravy.
- Ready to serve.
Serve 6 - 8
Note :
If the coconut palm is planted beside
the house, it is believed that the head of the household will not have
an easy life.
