Chicken With Couscous Stuffing Recipes

Ingredients :

40 g couscous

150 ml boiling water

4 chicken breasts

3 tbsp soured cream

2 spring onions

25 g seedless raisins

pinch of ground ginger

pinch of salt

40 g butter

1 tbsp oil

2 tbsp clear honey

1 tbsp soy sauce

Method :
  1. Put the couscous into a bowl and pour on the boiling water.
  2. Leave to stand for 5 minutes.
  3. Put each chicken breast between 2 pieces of cling film or greaseproof paper and beat out until thin.
  4. Stir the soured cream, finely chopped onions, raisins, ginger and salt into the couscous.
  5. Divide the mixture between the chicken breasts.
  6. Fold in sides of chicken breasts over the filling and roll up to form parcels.
  7. Tie with cotton or fix with cocktail sticks.
  8. Heat the butter and oil and fry the chicken rolls on all sides until golden.
  9. Cover and simmer for 15 minutes.
  10. Mix the honey and soy sauce and stir into the pan.
  11. Cover and continue simmering for 5 minutes, occasionally spooning the pan juices over the chicken.

Note :

An original recipe with chicken breasts which livens up their rather bland flavor.
