Method :
- Put the couscous into a bowl and
pour on the boiling water.
- Leave to stand for 5 minutes.
- Put each chicken breast between 2
pieces of cling film or greaseproof paper and beat out until thin.
- Stir the soured cream, finely
chopped onions, raisins, ginger and salt into the couscous.
- Divide the mixture between the
chicken breasts.
- Fold in sides of chicken breasts
over the filling and roll up to form parcels.
- Tie with cotton or fix with
cocktail sticks.
- Heat the butter and oil and fry
the chicken rolls on all sides until golden.
- Cover and simmer for 15 minutes.
- Mix the honey and soy sauce and
stir into the pan.
- Cover and continue simmering for 5
minutes, occasionally spooning the pan juices over the chicken.
