Chicken With Rice Pilau Recipes

Ingredients :

1.35 kg chicken

1 garlic clove

2 tsp vinegar

salt and pepper

2 tbsp oil

5 tsp sugar

2 large onions

350 g long grain rice

225 g canned tomatoes

25 g seedless raisins

1 whole hot chili pepper, optional

small bunch of chives

1 tbsp fresh thyme

12 green olive, optional

725 ml boiling water

Method :
  1. Cut chicken into 6 or 8 pieces.
  2. Season with crushed garlic, vinegar, salt and pepper.
  3. Heat oil in a large saucepan.
  4. Sprinkle in sugar and allow to brown.
  5. Brown chicken pieces in the pan.
  6. Add slices onions, rice, tomatoes and their juice, raisins, chili pepper, chopped chives and thyme, olives and water.
  7. Bring to the boil, cover and simmer gently for 25-30 minutes until the rice is tender and the liquid has been absorbed.
  8. Stir occasionally to prevent sticking.
  9. Remove chili pepper, and serve at once.

Note :

A richly flavored dish of chicken and rice which may be conveniently cooked in one pan on top of the stove.
