Method :
- Cut chicken into 6 or 8 pieces.
- Season with crushed garlic,
vinegar, salt and pepper.
- Heat oil in a large saucepan.
- Sprinkle in sugar and allow to
brown.
- Brown chicken pieces in the pan.
- Add slices onions, rice, tomatoes
and their juice, raisins, chili pepper, chopped chives and thyme,
olives and water.
- Bring to the boil, cover and
simmer gently for 25-30 minutes until the rice is tender and the
liquid has been absorbed.
- Stir occasionally to prevent
sticking.
- Remove chili pepper, and serve at
once.
Note :
A richly flavored dish of chicken and
rice which may be conveniently cooked in one pan on top of the stove.
