Cock a Leekie Recipe

Ingredients :

chicken

chicken stock

pearl barley

leeks, trimmed and washed

prunes, pitted and soaked

chopped parsley

cream, optional

freshly ground black pepper, to taste

bouquet garni

Method :
  1. Simmer chicken in a large, partially covered saucepan with stock, barley and bouquet garni for 40 minutes.

  2. Slice and rinse leeks thoroughly.

  3. Add them, with the prunes, to the stock.

  4. Cook for a further 15 minutes.

  5. Discard the bouquet garni, lift chicken from pot.

  6. Skin and bone chicken, cut the meat into bite-sized pieces, returning these to the pan.

  7. Chill soup then skim fat from the surface.

  8. Reheat, adding parsley and seasoning.

  9. Stir in cream, bring to the boil.

  10. Serve with crusty bread.
