Method :
Heat oven to
350F (175C). Line a shallow baking pan just large enough to hold the two
pieces of chicken with aluminum foil. Combine corn flake crumbs, salt,
curry powder and ginger in a flat dish. Dip chicken pieces in evaporated
milk then roll them in the corn flakes mixture to coat both sides. Put
in foil-lined pan, skin side up and bake about 75 minutes or until
chicken is very tender. Serve with apple chutney.
