Cornish Game Hens with Rice Stuffing Recipes

Ingredients :

1-pound Cornish game hens

butter or margarine

water

chicken bouillon cube

lemon juice

salt

3-ounce can chopped mushrooms

slivered almonds

finely chopped onions

uncooked long-grain rice

Method :
  1. Season game hens inside and out with salt and pepper.

  2. In small saucepan, cook almonds, onion, and rice in butter for 5-10 minutes, stirring frequently.

  3. Add water, bouillon cube, lemon juice, and salt.

  4. Bring mixture to boiling, stirring to dissolve bouillon cube.

  5. Reduce heat; cover and cook slowly about 20-25 minutes or till liquid is absorbed and rice is fluffy.

  6. Stir in the drained mushrooms.

  7. Lightly stuff birds with rice mixture.

  8. Place breast up on rack in shallow baking pan.

  9. Brush with melted butter or margarine.

  10. Roast covered in hot oven (400) for 30 minutes.

  11. Uncover and roast 1 hour longer or till drumstick can be twisted easily in socket.

  12. Brush birds with melted butter during last 15 minutes of roasting times.
