Method :
Serves 8-12
Wash chicken
pieces and dry well on paper toweling. Heat oven to 375F (190C). Put 1/2
cup butter or margarine in each of 2 large shallow baking pans that will
hold the chicken pieces in a single layer. Put the pans in the oven to
melt the butter. Combine bread crumbs, thyme, marjoram, rosemary,
paprika, salt and pepper in a large flat dish. Beat eggs and water
together with a fork in another flat dish.
Roll each
chicken piece in the egg mixture then in the crumbs to coat well and put
the pieces in the prepared pans, turning them over once in the butter. Try
to place chicken pieces so that they are not quite touching each other.
Bake 60 minutes or until tender and browned, turning chicken pieces after
first 30 minutes. (IF you oven won't hold both pans at once it won't hurt
to let one pan stand while the other is baking.) Cool and chill. Serve
with any or all of the following dips.
