Hawaiian Meatballs Recipes

Ingredients :

1 lb extra-lean ground turkey breast, meat only, no skin

1 cup cooked brown rice

1 (8-oz) can crushed pineapple in juice, drained

1/2 cup chopped scallions

1 table spoon reduced-sodium soy sauce

1 tea spoon ground ginger

Nonstick cooking spray


3/4 cup defatted chicken broth

1/3 cup ketchup or chili sauce

3 table spoon seasoned rice vinegar

2 tea spoon brown sugar

2 tea spoon cornstarch

1/2 tea spoon ground ginger


Method :

  1. Combine meatballs ingredients in a medium-size bowl; mix thoroughly.
  2. Spray a baking sheet with nonstick cooking spray.
  3. Shape meat mixture into 45 (1-inch) balls and place meatballs on baking sheet.
  4. Bake at 350 degrees F for about 25 minutes or until cooked through.
  5. Transfer meatballs to a chafing dish, crock-pot or heated casserole to keep warm.
  6. Combine sauce ingredients in a small saucepan and stir until cornstarch is dissolved.
  7. Place over medium heat, stirring until mixture comes to a boil.
  8. Reduce heat to low; stir for another minute or until mixture thickens lightly.
  9. Pour sauce over meatballs, toss gently to mix, and serve.
