Ingredients :
1 large
potato, scrubbed
1.5 tea
spoon canola oil
1/4 cup
slivered onion
1/4 cup
slivered green pepper
5 oz.
boneless, skinless chicken breast, diced
1 tea
spoon paprika
1 tea
spoon onion powder
1/4 tea
spoon garlic powder
1/8 tea
spoon oregano
1/8 tea
spoon chili pepper
1/8 tea
spoon cumin
Juice
of one small lime
1/4 cup
water

Method :
- Heat oil in a skillet
- Sauté onion and green pepper over high heat
until tender.
- Remove vegetables from skillet and set
aside.
- In the same skillet, cook chicken pieces in
remaining oil over medium-high heat until done, about 3-4 minutes.
- In a small bowl, combine all spices; add
spice mixture, lime juice and water to chicken in skillet.
- Simmer uncovered over medium heat 5
minutes.
- Return vegetables to chicken mixture and
heat an additional minute.
- Spoon fajita mixture and some juice into
baked potato.
