Idaho Style Chicken Fajita Recipes

Ingredients :

1 large potato, scrubbed

1.5 tea spoon canola oil

1/4 cup slivered onion

1/4 cup slivered green pepper

5 oz. boneless, skinless chicken breast, diced

1 tea spoon paprika

1 tea spoon onion powder

1/4 tea spoon garlic powder

1/8 tea spoon oregano

1/8 tea spoon chili pepper

1/8 tea spoon cumin

Juice of one small lime

1/4 cup water


Method :

  1. Heat oil in a skillet
  2. Sauté onion and green pepper over high heat until tender.
  3. Remove vegetables from skillet and set aside.
  4. In the same skillet, cook chicken pieces in remaining oil over medium-high heat until done, about 3-4 minutes.
  5. In a small bowl, combine all spices; add spice mixture, lime juice and water to chicken in skillet.
  6. Simmer uncovered over medium heat 5 minutes.
  7. Return vegetables to chicken mixture and heat an additional minute.
  8. Spoon fajita mixture and some juice into baked potato.
