Nutty Chicken Breasts Recipe

Dijon mustard

large chicken breast fillets

eggs, lightly beaten

pecan nuts, finely chopped

fresh breadcrumbs

oil

butter

Method :

Spread the mustard over each chicken breast and dip into the beaten eggs. In a large bowl, combine pecan nuts and breadcrumbs. Coat chicken breasts and chill for 1 hour. Heat oil and butter in a large frying pan over moderate heat. Add the coated chicken breasts and fry for 4 minutes each side or until cooked through. Serve immediately.
