Provencale Chicken Recipe

button mushrooms
green capsicum (pepper), seeded and cut in
shape
clove garlic, crushed
large tomatoes, seeded and chopped
Chablis or other white wine
tomato puree
bouquet garni
parsley, chopped
black olives
salt, pepper, cinnamon |
Method :

Season chicken pieces with salt,
pepper and cinnamon.

Heat oil in fry pan.

Brown chicken pieces on all sides,
remove from pan.

Drain on crumpled kitchen paper.

Lightly sauté onions, mushrooms,
capsicum and garlic, remove and drain.

Sauté tomato, stir in wine.

Return vegetables to pan, add lemon
puree and bouquet garni, heat gently.

Add chicken pieces to pan with sauce.

Heat, then remove bouquet garni.
-
Arrange chicken on serving dish.

Pour over sauce with vegetables.
-
Sprinkle with parsley and olives.
-
Serve hot with buttered pasta.
