Roast Chicken Percik Cooking Recipe

Grind ingredients to paste (a):

margarine

steamed chicken

salt and sugar to taste

 

shallots

dry chilies

ginger

pips garlic

 

shallots    (to pound)

corn flour, blended with a little water

coconut milk from 1/2 coconut

Method :
  1. Marinate chicken with ingredients (a) for 1 hour.

  2. Remove and roast chicken for 15 minutes.

  3. Set aside.

  4. To prepare gravy, heat margarine and fry ingredients (b) until fragrant.

  5. Add corn flour and coconut milk to thicken the gravy.

  6. Add roast chicken into the gravy and stir well.

  7. Allow to cook until gravy is absorbed.

  8. Remove chicken from the stove and roast for another 15 minutes until crisp.

  9. Meanwhile, dish up balance of the gravy and set aside.

  10. When serving, pour gravy over roasted chicken.
