Winter Melon Rolls Recipes

Ingredients :

300g winter melon

150g chicken breast

20g carrot

1 Chinese dried black mushrooms, soak until soft

1 sprig Chinese parsley

Marinade

1/4 tsp salt

1/2 tsp sugar

1 tsp light soy sauce

a little pepper and sesame oil

Sauce

4 tbsp hot stock

1 tbsp light soy sauce

1 tsp dark soy sauce

1 tsp sugar

Method :

Slice winter melon thinly into 5cm by 15cm rectangles. Blanch in boiling water briefly until soft. Shred chicken breast, carrot and mushroom. Chop Chinese parsley roughly. Mix with marinade. Place winter melon flat. Put enough filling on it. Roll into a barrel shape. Arrange on a greased plate and steam over high heat for 8 minutes. Pour sauce over and serve hot. Winter melon is a summer vegetable. It is commonly used in soups and stews. It is quite innovative to use a thin slice of winter melon as a wrap.
