Braised Duck with Lotus Root Recipes

Ingredients :

600g lotus root

1/2 gutted duck - 750g

4 shallots (with membrane removed)

3 slices ginger

1/2 tbsp Shaoxing wine

2 sprigs leek (sectioned)

3 cups of water

Marinade

1 tbsp light soy sauce

1/2 tbsp ginger juice

1/2 tbsp Shaoxing wine

Seasoning

1/2 tsp salt

1 tsp granulated sugar

Sauce

1 tbsp oyster sauce

1/2 tsp caltrop starch

2 tbsp water

Method :

  1. Wash duck and wipe dry. Add marinade and marinate for 1 hour. Deep fry in warm oil and drain.

  2. Wash lotus root and peel. Cut both ends and halve vertically.

  3. Heat 2 tbsp of oil. Sauté ginger slices, shallot and half portion of leek. Return duck to wok. Sizzle wine. Then add 3 cups of water and seasoning. Cover with lid. Braise until the ingredients become tender. Remove duck and lotus root. Cut into pieces. Then arrange on a plate. Add sauce ingredients to the remaining sauce. Bring to the boil. Pour over duck and lotus root.

Serves 2 - 4
